Well for all those that know me, I have a very extensive multi-national family of every color. I decided to go by Grandma Kathy and Clarks to feed the fellas while shes in St. Louis visiting for several weeks. They have a wonderful classic Rock band called, Rapid Fire.com
Lets get down to business.
-
first grill your chicken, and then place olive oil in a pan, or skillet with the onions to let them caramelize.
-
take the chicken out of the onions, and place the wine, and simmer for 2 minutes.
-
next add 2 cups of heavy cream and 1 can of, cream of mushroom into pan and stir on low until you get the right consistency you like,
-
Boil fettuccine and place aside. Always cool down fettuccine in cold water to keep it from cooking.
-
place sauce over fettuccine and accompany with tomatoes, and chives. Enjoy

so many ways to essentially prepare Salmon , Here’s a simplistic way to prepare it on a Hot cast iron skillet in less than ten minutes.
- Place oven on 450- 475 degrees.
- place a thin layer of olive oil, or canola oil in skillet
- place salmon with skin at the bottom in skillet
- brush salmon with butter or olive oil, mixed with your favorite wine if you like
- sprinkle Salmon with fresh garlic, or garlic powder and A dash of sea salt
- squeeze fresh lemon over salmon and place in the oven for 7-10 minutes
- You could place foil over the Salmon if you like a more moistened Salmon taste.

OK Some of my good friends such as Lisa Presley want to know simplistic meals. You don’t have to wait for fried green tomatoes my friends. I have a wonderful way to fry Red Tomatoes that is great. Take for example Roma Tomatoes. Cut them in half, Place them in an egg wash. Place them in a bag of Italian bread crumbs with your favorite cheese, shake and them place them in a Hot Skillet, or sautee pan with Olive oil.
Brown both sides and place on a salad or incorporate them into a wonderful cream sauce, or salsa.
Enjoy. Im sure youll enjoy thewonderful flavor. Blessings you all

December is always a busy month for catering. Ann Lynn asked me to incorporate a special event for her patrons from Georgia, in which I couldn’t resist. They all hail from Atlanta Georgia, and work at, The Dunbar Neighborhood Center.
Those who know me know my families originally from Georgia, including my Uncle Little Richard. We all had a good time. They enjoyed my Collard Greens, and Apple Potato Salad, just to name a few. Well you all. Thank you for flying out here to New Mexico, we all enjoyed your hospitality.

Chef Joyce once again making Thankgiving so easy.

- Chef Joyce giving a demo on how to break down a turkey.
I always admire watching Chefs in action. Chef Joyce who was the first female Chef of the year in Albuquerque twice, was my Culinary instructor college. She is filled with knowledge and wisdom, and I had the pleasure once again to see her in action, performing a turkey demonstration.
-
Chef Joyce used a roasting oven to cook her turkey, which saves alot of time and seals in the moisture of the turkey.
-
She also mentioned to always wear gloves.
-
Chef Joyce also mentioned to cut a line down the base of the breast for a better cutting angle.
-
Next you remove the wings, of the turkey. You can here them come apart
-
Always cut breasts away from the breast plate, and then cut the breats into small portions
-
Use your gloves to take off the rest of the turkey from the bone.
Chef joyce also metioned that some people save the carcass as a family tradition to give to the dogs.
She also metioned to save the odd pieces of turkey for soups, and stews.
Chef Deezie Tip. Never place your stuffing inside of a turkey that is raw, it is a recipe for disaster. Let the turkey cook first to avoid any food born illness, and as always well see ya soon k.
