We all had a wonderful time at Founders day in oldtown.  We have  several gift baskets on hand in Old Town, at 404 San Felipe N.W. Patio Escondido.

OK Some  of my good friends such as Lisa Presley want to know simplistic meals.  You don’t have to wait for fried green tomatoes my friends.  I have a wonderful way to fry Red Tomatoes that is great.  Take for example Roma Tomatoes.  Cut them in half, Place them in an egg wash.  Place them in a bag of Italian bread crumbs with your favorite cheese, shake and them place them in a Hot Skillet, or sautee pan with Olive oil.

Brown both sides and place on a salad or incorporate them into a wonderful cream sauce, or salsa.

December is always a busy month for catering.  Ann Lynn asked me to incorporate a special event for her patrons from Georgia, in which I couldn’t resist.  They all hail from Atlanta Georgia, and  work at, The Dunbar Neighborhood Center.

Those who know me know my families originally from Georgia, including my Uncle Little Richard. We all had a good time.  They enjoyed my Collard Greens, and Apple Potato Salad, just to name a few.  Well you all.  Thank you for flying out here to New Mexico, we all enjoyed your hospitality.

Since this is the Holidays, I would like to thank everyone who inspired me, one of which is my Uncle Little Richard.  I remember going with him to various concerts in the Limousine, and going through private doors at the banks, sell out crowds in Texas, California, and just talking about how we both miss our mothers very much. Thank you uncle for inspiring me.  I’m also happy your surgery went well, Ill see you soon, and we love you.  Danny Ill see  you at the mansion this summer, wew!!

I always admire watching Chefs in action.  Chef Joyce who was the first female Chef of the year in Albuquerque twice, was my Culinary instructor college.  She is filled with knowledge and wisdom, and I had the pleasure once again to see her in action, performing a turkey demonstration.
  • Chef Joyce used a roasting oven to cook her turkey, which saves alot of time and seals in the moisture of the turkey.
  • She also mentioned to always wear gloves.
  • Chef Joyce also mentioned to cut a line down the base of the breast for a better cutting angle.
  • Next you remove the wings, of the turkey.  You can here them  come apart
  • Always cut breasts away from the breast plate, and then cut the breats into small portions
  • Use your gloves to take off the rest of the turkey from the bone.

Chef joyce also metioned that some people save the carcass as a family tradition to give to the dogs.

She also metioned to save the odd pieces of turkey for soups, and stews.

Chef Deezie Tip.  Never place your stuffing inside of a turkey that is raw, it is a recipe for disaster.  Let the turkey cook first to avoid any food born illness, and as always well see ya soon k.

Well larry and Terrence.  Im  proud to say that you Navy Vets mission by Chef Deezie  has been achieved.  It was such a pleasure to see Ms. Diane in person, and chat with her about her son.  Larry your mom wanted to show you the outside of her new home, which is at the top.  If you all look real closely at the first picture, you will see cascades of beautiful colors streaming across the yard.

Septemeber 27, 2009 was a fabulous day. The weather was welcoming and Pamela and Toki were simply the toast of the town.  I had such a fantastic time.  I even had the pleasure of walking with Toki down the Old Town walkway. He was so upbeat and full of joy, expressing how he was excitied to finally be able to marry the woman of his dreams.  All of their friends predominately 98%  of them flew in from Seattle Washington for their wedding

Old town was definetly the perfect place to be united.  Chilis in the backdrop, a romantic setting, and a church luminating with love and candles.  Congratulations you all on your wonderful marriage and thank you for choosing chef Deezie once again.  Ill see you all soon.

I Couldnt keep the Prosicutto wrapped Melon and BAcon wrapped Scallops on the buffet long enough to take picutes, along with the Teriyaki  Chicken skewers.  Id like to thank yo all for enjoying the food and keeping my action station moving at the speed of sound Lol.  I enjoyed every moment of it.  Ohh shouts ouot to my brother Terrence who resides in Seattle and his family also .

To those that know me, while im not being a book worm in college, or catering, im on the movie set.  In September of 2009, be sure to check out “Citizen Game” Starring,  Gerad Butler from 300, and The Hip Hop mogule Ludacris.  This was an intense movie while attending Culinary School, but well worth it.  “Keep  your dreams beyond the stars and make moves”!  Chef Deezie.
