I always admire watching Chefs in action.  Chef Joyce who was the first female Chef of the year in Albuquerque twice, was my Culinary instructor college.  She is filled with knowledge and wisdom, and I had the pleasure once again to see her in action, performing a turkey demonstration.
  • Chef Joyce used a roasting oven to cook her turkey, which saves alot of time and seals in the moisture of the turkey.
  • She also mentioned to always wear gloves.
  • Chef Joyce also mentioned to cut a line down the base of the breast for a better cutting angle.
  • Next you remove the wings, of the turkey.  You can here them  come apart
  • Always cut breasts away from the breast plate, and then cut the breats into small portions
  • Use your gloves to take off the rest of the turkey from the bone.

Chef joyce also metioned that some people save the carcass as a family tradition to give to the dogs.

She also metioned to save the odd pieces of turkey for soups, and stews.

Chef Deezie Tip.  Never place your stuffing inside of a turkey that is raw, it is a recipe for disaster.  Let the turkey cook first to avoid any food born illness, and as always well see ya soon k.
